What equipment is needed for a coffee shop. How to open a coffee shop from scratch, business cost

Coffee is the most popular drink in the world today. Of course, he did not bypass Russia. Compared to tea, it is more common and in high demand. There are a huge number of varieties of such a drink, but most of them prefer Arabica. To get black coffee, you need to roast green beans. This is what makes it unique in taste and color. Due to the fact that the drink is so popular, there were different ideas for the development coffee business. In this article, we will look at the process opening a coffee to go point .

About the opening of the point of "coffee to go"

Today, it is rare in any city that there is no coffee shop. Such establishments are very common. They are in the service industry.

If we take only Moscow, then every year there grows coffee consumption. Every day, Muscovites spend approximately thirty thousand dollars to buy this tonic drink. According to experts, this number will only grow every year. It is noticed that coffee displaces all other drinks, such as juice and even tea.

Territory for the project "Coffee to go"

I would like to note that the coffee points there is a great advantage over an ordinary coffee shop where you can enjoy coffee, but only in an establishment. As for the coffee point, there is an opportunity to pick up coffee to go . In fact, there are a lot of people who like coffee, but not everyone is ready to spend their time sitting in a coffee shop.

There are people who prefer to drink coffee elsewhere. For example, at home. Someone likes to enjoy the taste of coffee in the park, and someone drinks it on the way to work. That is why many people take it with them. Be sure to include fundamental points in the business plan. First of all, this is a place for an institution. You still need to register, collect all the necessary permissions. It is important to find suppliers of raw materials and purchase the necessary equipment. Be sure to calculate all major costs.

Organization of business should begin with the choice of territory. Stay in busy parts of the city. If possible, it is better to settle in a shopping center. This is also suitable for a large store.

An example is the cafe "Coffee House". They have placed all their establishments in those places where a lot of people gather. good the place for a coffee shop will be an airport or a bus station. It can also be located next to the educational institution. In fact, the choice of location should be taken seriously, as it means a lot to the business, as it should affect the stability and number of customers, and as a result, profit.

Children's cafe as a business

If you want to create a children's cafe, then the conditions remain the same. But the emphasis here should be on the entertainment program. As for the menu, it should be special. If you want to get regular customers and good recommendations of your establishment, you should come up with a very interesting entertainment for children.

When developing a business plan, you need to correctly calculate the throughput. Be sure to take into account every nuance. Cafes should be planned so that each person has five square meters.

At the time of buying furniture you need to choose a nursery so that it is comfortable, practical and light. Not bad if, in addition to everything, it will be attractive. If you don’t know how to design a cafe and what setting to choose, you can turn to a competent designer for help. He will be able to turn your cafe into a fabulous corner.

To equip children's cafe will have to spend six hundred thousand million rubles. The institution will be able to pay off in six to twelve months. If you did everything right, chose the right place, created competent advertising, you can expect that you will receive good income.

Collection of documents and registration

« Coffee to go' must be registered. To do this, you need to register an individual entrepreneur or LLC. To do this, contact the tax office. It is better to choose the first option, because this way you will save time and money.

Before open a restaurant, you must invite the sanitary and epidemiological service to get an opinion. There are certain standards that a food service establishment must comply with. They put forward certain requirements for placement, for how sewerage and water supply are organized, in what conditions they work indoors. It is important how the room is arranged and maintained, how it is equipped. There are certain requirements for containers and utensils, as well as inventory. Need to talk about requirements to food and raw materials, to their transportation. It is important how measures are taken to combat rodents and insects. Requirements are also put forward for the personal hygiene of personnel, how production control is organized. In fact, you can see all the rules in sanpin.

If you build a building from scratch, then you can not do without a permit issued by the fire inspectorate. But if you are renting a room, then you do not need to worry about this. But it should be understood that every year you will have to deal with inspections from the fire department. You will also be visited by the SES authorities.

Equipment

Before you start writing a business plan, you need to analyze equipment market. You should also study the rest of the technical material that will be needed for the institution. It is better to buy professional equipment. This applies in particular to . The best are considered Italian made models. Their cost is higher than conventional machines, however, there is no need to save on this. If you choose professional quality equipment, it will serve you faithfully for many years. And it's very easy to buy it.

You can ask for help from firms that supply raw materials for you. This refers to coffee. They will be able to help you with the purchase of equipment that is needed. You will definitely need a coffee maker and containers where you will pour the drink. They must be sealed. You will need a mug in which you can take coffee with you. It is presented in the form of a special glass. It is able to keep warm for a long time even in the cold. It is very convenient to drink from it. When an establishment is famous, it buys containers engraved with its logo.

You will also need to buy refrigeration equipment to store dairy products and confectionery. You can not do without furniture, showcases and cash registers. Since you need to use only purified water to make a drink, you need to get filters.

Staff

Be sure to select employees for the institution. You will need one or two people. It is clear that for a large institution, the state will also be large. Still you have to hire administrator with waitresses. If necessary, you can take a security guard and a cleaning lady. But each employee must have a medical book, they must follow the rules of personal hygiene. If you want to have a wide range of products for coffee, you can set up your own confectionery production. To do this, you will have to acquire one or two assistants. All employees must be educated.

It is important that the staff be polite, treat customers correctly. After all, it is directly related to the success of your institution. Therefore, you can even arrange training courses. Be sure the waiters know their job. Moreover, they are required to know the entire range, to understand the difference between coffee varieties.

Interior

I want to write, the room must have several rooms. One will be for the manager, the other to store raw materials, and the third will house the staff. There should also be a bathroom with a shower in the room. It is of great importance cafe layout. The floor of the establishment should be used for production needs. The remaining part should be equipped with tables where visitors will be placed.

Since your establishment has a primary focus on preparing a drink as well as serving a ready order, amenities may be minimal. It is better to use simple dishes. You can hang small lamps on the walls. You can also place them on tables. Provide background music if possible. It is better to buy small furniture, then the space will not be cluttered.

The financial component of the business

It is clear that a business plan does not exist without financial calculations. The costs of the coffee shop are directed more towards purchase of equipment. According to experts, such a business should pay off in a year or two. As for profitability, it is very high, it is forty-sixty percent. To open a coffee shop, you have to invest fifty thousand dollars. It is clear that the organization of a small institution will require a smaller amount.

Advertising

Advertising is very important when you are going to open a coffee shop. The most efficient is signboard outside. You can also order a video rental on TV, radio advertising is also suitable. But this may not give the desired effect, since the bulk of the visitors will be those who live or work nearby.

You can also lure customers by organizing various promotions and small discounts. You can offer cards to regular customers. When you open an institution, the one plus one promotion is effective. For example, when buying one glass of coffee, the second one is free. You can organize the distribution of leaflets, which will contain all the information about the institution. In this way, too, you can get buyers.

Finally

Considering all of the above, then opening a coffee shop is a tricky business. It is important to have a serious initial capital, to have organizational skills. It is very important to choose the right place for your establishment. Usually "Coffee to go" is organized in crowded places. These are usually business districts.

It is very reasonable to locate a coffee shop near a shopping center. And in order to make a reputation and withstand competition, you need to make high quality products, have a wide range and affordable prices.

Ruslan Mitrofanov from Vladimir told us how he decided to buy, why he chose Take and Wake, and how the construction experience helped him in his work.

Ruslan Mitrofanov is a partner at Take and Wake in Vladimir

- a network of coffee shops in the format of coffee to go. Open points in shopping and business centers, street kiosks. They brew coffee from their own roasted beans, which are imported from Brazil, Ethiopia, Kenya and Rwanda. In addition to the classics, there are 14 signature drinks on the menu. Promotions and discounts are regularly held, seasonal offers are valid. The client can order and pay for a drink through the company's mobile application, which is suitable for iOS and Android.

The owner of the network, Konstantin Kuzminykh, opened the first outlet in 2014 in Moscow. Since 2015, the company has been selling a franchise. As of the end of 2017, the Take and Wake chain operates 23 coffee shops throughout Russia and sold 1 million cups of coffee. The company's goal is to open 1,000 coffee shops in 5 years.

Own business

The Take and Wake coffee house is not the first business of Ruslan Mitrofanov. Since 2014, Ruslan, together with his friends, has been running a construction company. They specialize in industrial mountaineering - they repair the facades and roofs of houses, install and wash windows, conduct electricity and other communications.

The idea to open such a business came to Ruslan when he worked in a similar company as an assistant to the head. There he studied the field and gained experience. Everything suited, except for the position. Ruslan was generally bad at working for hire. He constantly saw the shortcomings of his leaders and did not hesitate to tell them about it. The leaders did not accept criticism and fired Ruslan. He had to look for a new place, but even there history repeated itself.

Ruslan's main business is working at height

Ruslan likes mountain climbing. For three years of work, his company has become famous in the Vladimir region. There are always orders, the plan is being fulfilled, profits are coming in. But Ruslan does not want to develop beyond the borders of his native region, he simply does not have such a desire, he already has enough.

Ruslan sees only one problem in the construction industry - seasonality. If during the summer it turns out to earn a lot, then in the winter this money simply goes to ordinary needs. In 2015, when his company was already a year old, Ruslan decided that it was time for him to open a second business. One that will generate income all year round.

Own coffee shop

Ruslan and his wife Daria are very fond of drinking coffee and are well versed in it. “I can tell good coffee from bad coffee,” says Ruslan. He was not satisfied with the quality of the drink in any institution in his city - sometimes too bitter, sometimes the aftertaste is unpleasant. So the Mitrofanovs had a dream of their own coffee shop.

Drawing attention to the prices of the drink in establishments and its cost, Ruslan came to the conclusion that the coffee business has a high margin, which means it should be profitable. I began to study the franchise market in this area. Ruslan was not going to open a coffee shop from scratch - there is too much to know and be able to do, and it will not work to combine it with the main business.

Ruslan found on the Internet. I read it - I liked it. Firstly, the philosophy of the company was close to Ruslan in spirit. And secondly, the price was right. If most coffee-to-go franchises at that time were sold for 250-300 thousand rubles, then Take and Wake offered their package for only 80 thousand. Ruslan called Konstantin, asked a few questions, received answers and began to think.

I thought six months. While thinking, followed the development of the company. When in May 2016 Ruslan discovered that the Take and Wake network of three points had grown to 20, and the entry fee had risen in price to 100 thousand rubles, he understood that he had to act. I called Konstantin again, arranged a personal meeting, and went to Moscow. And he liked the person, and the company, and most importantly - coffee. I signed a contract, paid a lump-sum fee, received a franchise package with instructions and went home to open a coffee shop.

Beginning of work

First of all, Ruslan dealt with organizational issues - agreements, permits, registration of forms of activity. There were no problems here - after all, Ruslan did not open a business for the first time and knew where to go and what to do. Yes, and the franchisor helped to resolve all issues with lawyers or accountants, collect documents. The problems started later.

Finding a place

Ruslan did not manage to find and rent a room for a coffee shop right away. Vladimir is a small city with only 350,000 people. In the very center of the city, where there are a lot of walkers and tourists, all the places are already taken and the rental prices are too high.

To help Ruslan solve the problem, Take and Wake's head office conducted an analysis of the territory and offered several options. Of these, Ruslan chose a room next to a large business center, not in the very center of the city, but next to it - a three-minute walk from the Golden Gate. Tourists go there, but the main part of the visitors are employees of the business center.

It was disturbing that a tent with coffee was already working nearby. But Ruslan opened his establishment in a different format, so he decided to take a chance - to make a coffee house better than that of competitors and lure their visitors to him. The place was approved.

The landlord was good. He not only did not ask for a deposit and an advance payment, but also gave a 20-day delay. As a result, Ruslan paid 30 thousand rubles for a month of rent. Every month, utility bills are added to this amount, it comes out to about 40 thousand.

Repair

On this joy from the premises ended - his condition was terrible. The walls were sheathed with plasterboard and covered with wallpaper 15 years ago, the electrics and plumbing worked somehow. A major overhaul was needed.

Ruslan spent 360,000 rubles on repairs and all 20 days of the lease deferment. It would have turned out more, but experience in construction helped. Ruslan did everything himself - demolished and rebuilt the walls, installed new doors, replaced the electrics and plumbing.

Even despite the savings, the preparation of the premises almost doubled Ruslan's budget. There was not enough money, I had to borrow from friends.

Friends helped, but the problems did not end there. Ruslan spent 150 thousand rubles on furniture. I ordered a bar counter from local craftsmen, but they did not complete the order on time. The opening day had already been appointed, and Ruslan was afraid that he would not make it in time. Therefore, the installation of the rack was taken up as soon as it was brought.

The sign was also installed at the last moment - three days before the opening.

Despite the fact that he had to work very quickly, Ruslan tried to do everything efficiently. At Take and Wake's headquarters, a design project was developed for him. Ruslan did everything possible so that his establishment did not differ in any way from the picture.

Equipment and consumables

When the problems with the repair and arrangement of furniture were resolved, it was time to buy equipment and supplies. On the recommendation of the main office, Ruslan purchased a Carboma freezer, a refrigerator, a toaster and a grill. I spent 60 thousand rubles on everything.

Ruslan rented a Simonelli coffee machine and a Fiorenzato coffee grinder from the main office for free. Its essence is that if you buy coffee and other consumables from the franchisor's suppliers, then the equipment is just given. And if you want to work with other dealers, the equipment will have to be returned or redeemed.

The suppliers of Take and Wake arranged for Ruslan, but the coffee machine did not. More precisely, not immediately. At first he was greedy and took a two-group, but it turned out that it was too big and would not fit on the counter. I had to go back to Moscow and change the coffee machine to a one-group one.

Ruslan also brought consumables from the Moscow office. I spent 60 thousand rubles on coffee, milk, syrups, cups, pitchers, holders and other trifles.

Staff

To save time, Ruslan started looking for employees for the coffee shop even before the renovation was completed. 30 people responded to a vacancy for a barista with a schedule of 2/2 and a salary of 25 thousand rubles in three days. Ruslan chose two and signed them up for training. Instructions for recruiting and motivating staff were given at Take and Wake's main office.

As a rule, employees are trained there - in their own barista school. But a specialist from the main office, Denis Kuzminykh, came to Ruslan's point on his own. For three days, he taught future baristas how to make delicious coffee and shared signature recipes. As a result of the training, the guys received certificates.

In addition to following the franchisor's recommendations, Ruslan took the initiative. A friend who does social media marketing suggested that he create an Instagram account for the coffee shop so that people would know about it even before it opens. So Ruslan did. Every day I posted news and photo reports there, wrote about problems, boasted of achievements. Instagrammers liked this initiative. In a year, almost 3,000 people subscribed to Ruslan's coffee shop account.

Clients

Ruslan believes that the main secret of success is to know your customers. Even before the opening, specialists from Take and Wake's main office helped him analyze the city, understand with whom and how best to work.

Ruslan decided to work with everyone. If, in general, a typical visitor in the network is a student, a young man under 35, then Ruslan often gathers women over 40, employees of the nearest business center, and managers. Regular visitors receive discount cards, and there are special offers for BC employees.

To make customers feel comfortable, Wi-Fi is available in the coffee shop, and each table has a socket. Soft music plays for atmosphere.

Expectations and reality

Comparing the expectations of buying a franchise with the reality of launching a coffee shop, Ruslan says that things didn't work out as planned. He expected to meet 400 thousand rubles, but spent 700 thousand.

Everything was clear on the franchisor's side, he was helped to resolve issues, gave instructions, but still some unplanned difficulties and expenses constantly arose. The repair of the premises alone exceeded Ruslan's budget twice.

Profit also had to wait longer than we would like. The coffee house reached the payback in two months, and the investments were completely repulsed only after seven. He thought it would be faster. For himself, Ruslan explained the extended terms by the fact that the institution opened in the winter. Most visitors come to Take and Wake for coffee to go, and winter is not the best time for festivities, Ruslan believes. In his opinion, the best time to open is summer or autumn.

Expenses and income

Expenses
Lump sum 80 000 ₽
Royalty 3% of revenue, but not less than 3,000 ₽
Legal registration 30 000 ₽
Rent 40 000 ₽ per month
Premises renovation 360 000 ₽
Furniture 150 000 ₽
Equipment 60 000 ₽
Consumables 60 000 ₽
Taxes, accounting and banking services 30 000 ₽
Salary of two employees 50 000 ₽
Income
Average check 150 ₽
Net profit 70 000-80 000 ₽ per month

Future plans

Ruslan is happy with the coffee shop, but still finds problems. After a year of work, he realized that it was time to look for administrators who would deal with the turnover and ensure that everything worked properly. Now employees call Ruslan for every little thing, he has to constantly come and repair or buy something. I would like to delegate the routine to someone else.

My experience: how to open a coffee shop from scratch and what it takes.

A step-by-step guide on how to open a small coffee shop, where to start, how to proceed, what permits are needed and, most importantly, how much profit a small coffee shop brings.

.

Opening a coffee shop from scratch.

What does it take to open a coffee shop? First of all, you need to find a good room in a passable place, it is desirable that this room already had a catering point before, then it will be much easier, because the room already has all the required communications - plumbing, sewerage, ventilation, meets the requirements of the State Sanitary and Epidemiological Supervision and fire service. Renting a room in the city center will cost you an average of $1,000 per month (depending on the city).

All you need at this stage is to conclude a lease agreement with the landlord.

Of course, before entering into a lease agreement for premises, you need to register your business activity, just contact the tax service and open an individual entrepreneur.

This activity corresponds to the OKVED code 55.30 “Cafe and restaurant activities”. Immediately you need to write an application for the transition to UTII, this is the best option for a taxation system for a small coffee shop.

Note! An entrepreneur who starts his business for the first time, according to the law on state control, will not be subject to inspections by the state sanitary and epidemiological supervision bodies for 3 years. After the opening of the coffee shop, Rospotrebnadzor must be notified in writing within 5 days.

But your coffee shop must comply with the sanitary and epidemiological requirements for public catering facilities, a complete list of requirements can be found in the regulatory documents of the State Sanitary and Epidemiological Supervision.

When the IP is already open and there is a room, we buy equipment. You will need only professional equipment:

Espresso machine.

Coffee grinder with dispenser.

Holder with tempera.

Oriental coffee machine.

It is also advisable to purchase a filter-type coffee machine.

French press.

Refrigerated showcase for desserts.

You can bake buns and croissants in a coffee shop, you will need a baking oven.

Before buying, carefully test the coffee equipment personally! Prepare all types of coffee on the equipment several times, the quality of the coffee drink directly depends on the equipment, raw materials and professionalism of the barista.

If you have a limited budget, it is not necessary to buy coffee equipment, it can be rented, there are coffee suppliers who provide coffee equipment for rent, provided that you buy coffee from them every month (usually not less than 10 kg of coffee beans per month).

Speaking of raw materials, the coffee market is very competitive among producers, so there are plenty to choose from. You need to periodically buy coffee beans, you need to find high-quality coffee at an affordable price, and as an option, you can not buy equipment, but rent it from suppliers.

The coffee house needs to be equipped, create your own style, install furniture for equipment, tables and chairs for customers.

Coffee shop interior design.

For you to understand, it is very difficult to find a room already renovated, usually you need to do the repairs yourself, (often cosmetic repairs are enough) the issue price is about $ 2000 if you hire a team of workers. It is more profitable to make repairs on your own, spend only on materials (wallpaper, paint, etc.). — 1000$. We order a sign for the premises in an advertising agency.

From furniture for a coffee shop, you will need several tables and chairs, several paintings and other decorative elements, as well as a bar counter and a couple of tables for coffee equipment.

Dishes (cups, saucers, spoons) and disposable coffee utensils to go.

To work, first of all, you will need an experienced barista, if you have a desire to master this profession on your own, then you can take barista courses that last no more than a month.

Barista - a specialist in the preparation of coffee drinks, a barista knows how to properly prepare coffee, including latte art.

Is it profitable to open a coffee shop? Judge for yourself, the cost of preparing one cup of espresso is no more than $ 0.20, and the price of a prepared drink is on average $ 1, the extra charge for coffee is more than 5 times!

The sale of desserts and baked goods increases sales by an average of 30%, the margin for desserts is about 100%.

How to open a takeaway coffee shop. Business plan: everything from site selection to payback

More and more people drink coffee, and few people are surprised by a take-away coffee kiosk. But a culture of drink consumption has appeared: now people prefer to drink coffee outside the home and sometimes pay a lot of money for a cup.

Most city dwellers constantly do not have enough time and do not always have the opportunity to visit gourmet coffee shops with good coffee. Therefore, a business model such as “coffee to go” or “coffee to go” has appeared, which allows people to quickly buy their favorite drink for little money.

“Coffee to go” and, in general, selling coffee is a highly profitable business, especially if you have more than one outlet. Today, the assortment of coffee is very wide, and thanks to competition, wholesale suppliers offer good prices and favorable conditions for different sales volumes.

The price of coffee beans, such as 100% Arabica, from trusted suppliers is an average of 400 UAH (1000 rubles) per kilogram. For one cup of Americano, you need about 7 grams of coffee - as a result, the cost is about 3 UAH (8 rubles) per cup, and they sell it at coffee to go points at a price of 15-20 UAH (45-60 rubles)! (The data is based on anonymous statistics of the Poster POS automation system for the cities of Russia and Ukraine.)

Coffee to go franchise or your own business model?

There are two ways to open such a business: independently or through a franchise. Depending on the choice of the franchisor, the finished project will cost UAH 70,000–200,000 (150,000–500,000 rubles).

Franchises for Ukraine:

Franchises for Russia:

The franchise package usually includes a ready-made brand book, point design and well-established promotion schemes, as well as its suppliers, technological cards and own drink recipes, business organization and accounting system consulting, perhaps even a general customer base and loyalty system. Some offer additional training for your staff at working coffee outlets as a bonus.

Of course, the availability of such services from the franchisor depends on the selected package and the terms of the contract. But in any case, in addition to acquiring a franchise, you will have to spend money and time on registering a business, purchasing equipment, initial investments in the first month of operation and working capital.

But you can save on buying a franchise, spend time searching for the necessary information and do everything yourself, having thought through your business model. This approach will take more time and effort, but you can invest more money in equipment or renting a good place. To help you in this difficult task, we have tried to cover all the most important points of the checklist for a novice owner of a coffee pot in this article.

Choosing a place for coffee

One of the most important points when opening a takeaway coffee shop is choosing a location. When calculating the patency of a place, it should be taken into account that approximately 3 people out of 100 are your potential customers. The greater the flow of people, the higher the revenue, the profitability of the institution and, consequently, the return on initial investment.

The most "fishy" places:

    pedestrian crossings;

    subway entrances;

    public transport stops;

    parks, squares, embankments;

    areas near educational institutions (universities, colleges, etc.);

    shopping centers and large pavilions;

    airports, train stations.

To maintain a high turnover of your coffee pot, you need to constantly monitor the dynamics of parameters such as number of checks And .

The number of checks depends on the patency of the place and the correct definition of the target audience. Even despite the high traffic, there may simply not be your potential customers among people.

What documents are needed to open coffee to go

Registration of sole proprietorship (Ukraine), individual entrepreneur (Russia) or LLC

Registration of FLP (IP) is much cheaper, faster and requires the collection of fewer documents. When registering with the tax office, you need to classify your type of economic activity as “food retail”. You must also obtain permission to open a point from the sanitary and epidemiological service, territorial property management authorities and the fire inspectorate.

The entire registration process takes an average of 3 to 4 weeks. If you do not want to solve these issues on your own, you can entrust all the work to a company that collects and prepares documents. It usually takes no more than a week and costs about 2,000 UAH (5,000 rubles).

If you plan to open a coffee shop on the territory of a shopping center, then it will be a little easier for you: you do not need to obtain permission from the fire department and other services. Shopping and business centers have almost all the necessary permits, except for the sanitary and epidemiological station.

Equipment for coffee to go

The most important equipment that you need to buy for a takeaway coffee shop is a coffee machine. The volume of the tank must be at least 8 liters, and the power must be up to 5 kW (this must be taken into account when calculating energy consumption). A smaller coffee machine simply won't be suitable for the required speed and volume of coffee preparation.

For quick work and instructing beginner baristas, it is better to consider devices with a minimum set of necessary functions. The fewer additional features, the cheaper and easier the repair of equipment. However, setting up any professional equipment takes a lot of time, and you will also need an experienced person to supervise coffee preparation during start-up and debugging.

Buying equipment for a coffee shop is the most expensive part of a business plan. It is best to trust manufacturers whose dealers and service centers are located in almost all regions: Saeco, Egro 70 Series, Settanta, Nuova Simonelli, CMA, Arctic.

High-quality foreign equipment is very expensive: UAH 60,000–100,000 (150,000–250,000 rubles) or more. But you can always consider the option of buying a used coffee machine and coffee grinder, which will be almost 2 times cheaper. You can also rent coffee equipment or even free of charge from coffee suppliers - subject to the conclusion of an agreement for the purchase of a certain amount of coffee within a year or several years. In addition, they can advise on the purchase of necessary equipment depending on the volume of coffee preparation and quite often help with the repair and maintenance of coffee equipment.

Don't forget about sales stand costs, the design of a rented island or kiosk and various little things that are also important for the comfortable operation of the point without overlays:

    consumables for coffee drinks (milk, toppings and syrups);

    snacks, sweets, snacks;

    disposable cups, lids, spoons;

    bar inventory.

coffee shop menu

The menu in small coffee shops without tables, as a rule, is limited to only a coffee card, if you do not have imported cakes, chocolate or other sweets in your assortment. Coffee and drinks based on it - depending on the season. Sale of coffee provides from 80% of all revenue, the rest is related products, most often various desserts.

To diversify the menu, add positions that not only differ in the way they are prepared (latte, espresso, cappuccino, etc.), but also types and varieties of coffee that will distinguish the drinks in taste. Now it is not enough to present only one type of coffee - in order to stand out from the competition, you need to offer an exclusive in the form of a unique variety or a mixture of different varieties. Don't forget the toppings and spices!

And most importantly - do not be too lazy to arrange a stand for the sale of roasted coffee by weight in branded packages - this is real will increase your average check.

What you need to open coffee to go - the choice of supplier

The quality of the coffee is the most important factor when choosing a supplier. Be sure to check all certificates for products and production and the conclusions of the sanitary and epidemiological examination. You can read more about choosing a supplier in, in which she answered all the most important questions about choosing coffee suppliers and working with them Irina Uskova, CEO of the Coffee Molly business coffee chain.

Coffee shop staff

The job of a barista is often viewed as temporary. To avoid turnover, you need to think. Most baristas are paid by the hour. According to trud.com, the average salary of a barista in Ukraine is UAH 5,000–6,000, depending on the city; in million-plus cities they are naturally larger, and in the capital they are the highest. In Russia, salaries are slightly higher, but also differ significantly from region to region - on average, from 25,000 to 35,000 rubles. Usually the shift lasts 10 hours, but if the coffee shop is located in a shopping or business center, then the beginning and end of work coincide with the opening and closing of the center (for example, from 10:00 to 22:00), and then the duration of the shift is 12 hours.

In addition to the rate, you can motivate the barista with a share of sales within 2-3% if the plan is met and all work instructions are followed.

How to open coffee to go from scratch. Financial plan

Concerning investment, then opening a take-away coffee shop is considered a business with little investment. If you choose the most budget options with inexpensive rent and used equipment, then you can meet UAH 100,000 (250,000 rubles), and the maximum is unlikely to be higher than UAH 180,000 (400,000 rubles).

* The cost of rent in shopping centers of large cities in Ukraine and Russia starts from 1000 UAH (2500 rubles) and goes up to 5000 UAH (13 000 rubles) per square meter. The price depends on the location of the shopping center itself, its class and the location of the point inside the shopping center. The average area of a coffee shop is 10 square meters. m.

** The list of purchased equipment includes: bar counter, refrigerator, coffee grinder, water filters, disposable tableware. The volume of purchased coffee depends on the traffic of the place.

Calculation of the cost of coffee to go

Consider the calculation of the cost on the example of a cup of Americano. As we said at the very beginning, at a price of 400 UAH (1000 rubles) per kilogram of coffee, about 120 servings can be made from this raw material - 3 UAH (8 rubles) for each. We also include here the cost of a glass with a lid, a stirrer and sugar - as a result, the cost of the drink will be approximately 7 UAH (18 rubles).

income per day

In the example, we calculate the average income of a take-away coffee outlet based on the average ticket amount and the number of purchases.

Monthly income

To increase profit, you need to increase the average check. Your barista can do this, the main thing is to properly motivate him. We need to sell more desserts, snacks, drink toppings, and encourage customers to order larger drinks.

The number of purchases also needs to be increased, but it is more difficult to do this: here it is already necessary to seriously work on the brand and recognition of your outlets with coffee to go.

It is very important to quickly serve the client: take the order, calculate and serve the drink. If the speed of preparing drinks depends only on the skills of the barista, then everything else can be greatly accelerated if an automation system is installed. For example, to use Poster POS, you will need an ordinary tablet that can easily fit on a stand. A barista places an order with a couple of touches on the screen, prints a receipt for the buyer, and the owner immediately sees this sale on the screen of his smartphone or laptop browser.

Payback point with coffee to go

The cost of drinks - 30-40%.

Profitability of sales - 22%.

Initial investment - UAH 105,000 (267,500 rubles)

Break even - from 2 to 4 months.

Return on investment - from 9 to 12 months.

Risks when opening coffee to go

What are the advantages and disadvantages of such a business? The success of the coffee-to-go business depends most of all on the location of the outlet. A big risk to business profitability is a decrease in traffic. For example, if your coffee shop is located in a shopping center, then the decline could be:

    during the holiday season (summer is a rather difficult period for the coffee business: at this time, people prefer to go to nature, to the sea, abroad, and not to walk around shopping centers);

    during the holidays (the basis of the target audience is students);

    during a crisis in the economy, exchange rate fluctuations, etc. (when the purchasing power of people falls, they less often go to shopping centers for non-essential products).

If your point is located at the entrance to the subway or at a stop, then the traffic depends primarily on the weather. Daily revenue will decrease during snow, rain and severe frosts. People are in a hurry to take shelter from the weather, and not stand at the kiosk waiting for coffee. There is also a decline in the summer period, but profits at this time can be increased in other ways, which we have already described in the article.

Results

"Coffee to go" or a mini-coffee shop is a profitable business, but you should not count on excess profits. On average, the monthly income from one point rarely exceeds 40,000 UAH (100,000 rubles), and most often it is 20,000–30,000 UAH (40,000–80,000 rubles). It is very good if in the first month you can go to zero, but in the future, with the expansion of the assortment and promotion of the point itself, increasing awareness, you can reach a more worthy profit of 80,000 UAH (140,000 rubles).

Despite the fact that the cost of a cup of coffee is 30-40% of the sale price, the profitability still remains at about 20%. Part of the revenue goes to renting a good place, but thanks to this, you can earn more, so you should not cut costs here.

The first 30-60 cups of coffee sold per day pay off the cost of rent and consumables. And only the following sales will already bring 60-70% of the profit.

To earn more, the owners of "coffee to go" open several points in different parts of the city- firstly, to increase your income and increase brand awareness, and secondly, to compensate for sales declines in different locations. For example, a point in a shopping center brings a stable income on weekends, but shows a rather low efficiency on weekdays, but with a point in a business center, the opposite is true.

Do not forget about the loyalty of your customers: encourage constant purchases, hold promotions: “The fifth coffee as a gift”, “Free waffle with a large cappuccino”, etc.

In our previous publication, we told you in detail about how to write a detailed . Let's continue this topic and discuss the next no less profitable idea of earning - coffee to go.

Coffee is a popular drink in many countries of the world, the demand for which not only does not fade, but even increases every year. Surely everyone has tried this invigorating drink, and many have already decided on their favorite varieties and recipes for making coffee.

Coffee to go as a business cannot be called a new idea of earning money, because it has been successfully existing for a long time. For the first time, the well-known fast food chain McDonalds offered a take-away coffee service. Today, this idea of making money is considered quite promising, thanks to the great demand for coffee. Mobile coffee shops exist and work successfully both in large cities and in small towns.

Takeaway Coffee: Advantages and Disadvantages of a Business

  • Mobility. Takeaway coffee service is most often offered by mobile stalls. The huge advantage of your kiosk is that you are not tied to one place, if necessary, you can always move to another area or even a city.
  • High demand. As noted above, coffee is very popular among people of different nationalities, ages, and social status. Therefore, almost every second person passing by will be your client.
  • Minimum investment. Starting a takeaway coffee business does not require large financial investments and special skills, so this idea of earning money is suitable even for a novice entrepreneur.

As for the cons, they, of course, are also present.

  • Competition. The popularity of coffee is obvious, so it is no secret that the competition in this area is quite serious. It is not recommended to open a coffee point near competitors (the same tents offering coffee to go). As for stationary coffee houses, they are unlikely to compete with you. Firstly, not every person has time to visit a catering establishment, most prefer to take coffee with them and go on business. Secondly, there are often no empty seats in coffee shops, because, as a rule, such establishments can accommodate no more than 30 visitors. Thus, even competition is not a reason to change your mind about opening a mobile coffee shop.

The most popular types of coffee

In general, a takeaway coffee business plan is a document with which you can evaluate the profitability of an idea and draw conclusions about the profitability of the project as a whole.

Business registration

Your primary task is the collection and execution of all necessary documents and permits for activities.

In this case, as a substantive form of activity, it is worth stopping at individual entrepreneurship, this will save you money and time.

After registration, you must apply to the relevant authorities to obtain permission to trade in public places and allocate a special place for the location of the coffee shop. You will also need to obtain permits from the sanitary and epidemiological and fire services.

Coffee shop location

The choice of a place to open a mobile coffee shop should be taken responsibly. Your profit depends on the correct placement. Offering coffee to go service is best in crowded parts of the city. It is very advantageous to place such a tent in the center, near the market, educational institution. In general, in places with high traffic and the absence of nearby competitors.

It is worth noting that an open mobile outlet does not require special communications. All you need to work is electricity. Sewerage and plumbing will not be needed, because bottled, filtered water is used to make coffee.

Coffee shop equipment on wheels

The quality of a coffee drink directly depends on the technique of preparation and the type of coffee. Therefore, you should be very responsible in choosing a coffee machine. Give preference to high-quality foreign models of coffee machines designed for industrial use.

You will also need a coffee grinder, special utensils for making coffee. You will also need paper cups for coffee, sugar, napkins. Be sure to pour the drink into convenient thermo glasses from which you can drink on the go.

In addition to this equipment, you also need to purchase a refrigerator for storing dairy products (milk, cream), desserts.

Employees

If you are opening a small coffee shop on wheels, you will need one or two employees to serve customers. In the case of opening a full-fledged coffee shop, it’s already possible to hire waiters, a bartender, a cleaning lady.

Regardless of the format of the institution, make sure that your employees are attentive to customers, cultured in communication, and also understand their work and can advise and tell about all the varieties of coffee offered in the institution. Remember that the attendance of the institution, and, accordingly, the income depends on the work of the team.

Costs and profits

First of all, let's discuss how much it costs to open a coffee shop. Immediately, I note that the bulk of the money will be spent on the purchase of equipment. But let's talk about everything in order.

Coffee shop equipment on wheels:

  • Professional machine for making different types of coffee;
  • coffee grinder;
  • bottled water;
  • Refrigeration equipment.

In addition to equipment, you will need to pay rent for the premises or purchase a coffee shop on wheels (equipped car), but its cost is quite high, so it is better for beginners to rent a mobile tent.

Also, the purchase of raw materials, that is, coffee, will be a constant waste. Give preference to well-known manufacturers who guarantee high taste qualities of the drink. You should not save on raw materials otherwise you will not have customers.

Advertising and customer acquisition

Opening a mobile coffee shop is easy, but making it popular is not so easy. Naturally, a lot depends on the location, the criteria for choosing which we talked about above, but we must not forget about the quality of service. Modern customers are very demanding and if you do not meet their needs, they will go to your competitors.

Ways to attract customers

Unlike a stationary coffee shop, a mobile tent does not require expensive advertising. All that is needed is an aesthetic, beautiful and bright design of a sign that will attract the attention of people passing by.

Profit

Income will depend solely on your work. Do not expect a quick payback, you can get a net profit not earlier than in a year.
